4th of July Fruit Kabobs
This is a cute, easy snack to bring to a 4th of July party! I used strawberries, marshmallows and blueberries. You could also try bananas in replace of the marshmallows :)
Stuffed Green Peppers
Ingredients:
- 6 large green bell peppers
- 1 pounds ground beef
- 1/2 cup chopped onion
- 1 Can (16 oz) diced tomatoes, undrained
- 1/2 cup white rice
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1 cup shredded cheddar cheese
- 1 teaspoon hot sauce
Directions:
- Slice the tops off the bell peppers and throw away the seeds and fibrous membrane Remove the stem portion of the top and finely dice the remaining portion of the tops
- In large pan, bring water to a boil. Add peppers, covering them completely in the water for 5 minutes. Remove peppers from the water and invert on a plate to drain
- In a large skillet, cook the ground beef, onion, and chopped bell pepper tops until the beef is no longer pink. When finished, drain the grease.
- Stir in tomatoes along with their liquid, uncooked rice, water, salt, Worcestershire sauce, and hot sauce. Season with black pepper. Bring to boil then reduce the heat; cover, Simmer the mixture for about 20 minutes.
- After 20 minutes, remove from heat and stir in cheese.
- Lightly salt the inside of the drained peppers. Spoon the meat mixture evenly into the peppers. Place them upright in a baking pan. If they will not stand up straight, use foil to hold them up.
- Cover and bake at 350 degrees for 30 minutes. Remove foil and make for 5-10 more minutes. Serve hot.
I got this recipe from my grandma. I absolutely love it!! It takes quiet a bit of time, so you will want to cook this on a day when you have the time. I had tried a stuffed peppers recipe for the Crock Pot and it was not nearly as good. My grandma got the recipe from cdkitchen.com.
