Ingredients
- 1 can (15oz) of whole kernel corn (drained)
- 2 (14.5 oz) cans of chicken broth
- 1 can (10 oz) of chunk chicken
- 1 can (15 oz) of black beans
- 1 can (10 oz) of diced tomatoes with green chili peppers (drained)
- 1 bag of tortilla strips (found near the salad dressing at the grocery store.)
Directions
- Combine all ingredients in a large pot.
- Cook at medium heat for 15-20 minutes.
This is an easy, healthy recipe! It goes well with salad. For added flavor, use cheese and sour cream as toppings!

- 2 can of crescent dinner rolls
Filling:
- 4 oz of sour cream
- 2 TBSP of butter
- 1 tsp of garlic powder
- 2 large chicken breasts-cooked and chopped
- 3/4 cups of cheddar cheese
- 1/2 tsp of black pepper
- 2 TBSP of milk
Spread over the top of filled crescent rolls
- 1 can cream of chicken soup
- 3/4 cup of cheddar cheese
- 1/4 cup of milk
Directions
- In a large bowl, mix together the filling ingredients (sour cream, butter, garlic powder, chopped chicken breasts, cheddar cheese, black pepper, milk.)
- In a medium bowl, mix together 1/4 cup of milk, 3/4 cup of cheddar cheese, and 1 can of cream of chicken.
- Spray 9x13 cooking dish and open crescent rolls.
- In each crescent roll, place 1 TBSP of the filling mixture and roll with the seem-side down.
- Place all filled crescent rolls in the pan and pour the topping mixture over the rolls.
- Bake for about 30 minutes at 350 degrees.

- 1 16 oz box of the pasta of your choice. I used Penne pasta
- 3 Boneless, skinless chicken breasts (cooked and cubed)
- 3/4 cup of hot sauce
- 3/4 cup of ranch dressing
- 1 1/2 cups of cheddar cheese
Directions
- Preheat the oven to 350 degrees.
- Cook the pasta in boiling water and drain
- Cook and cube chicken breasts. I usually cube them on a cutting board and then cook them over the stove in olive oil. When they reach 180 degrees, they are ready to be drained
- In a small bowl, mix together hot sauce and ranch
- In a larger bowl, mix chicken, pasta, and cheese. Pour sauce in the bowl and mix together.
- Pour everything into 9x13 pan and bake for 20-25 minutes.
Mixed Berry Cobbler
- 2 (16-ounce) bags frozen berries
- Dump mixed berries into the bottom of a 9x13 pan
- Sprinkle white cake mix over the top of berries
- Pour 12 oz of 7-Up over the cake mix. Do not mix.
- Allow to sit for 3-5 minutes.
- Bake for 45-50 minutes at 350 degrees.
